Herring roes, or milts, are normally sold frozen or defrosted but occasionally can be found fresh during the spring and early summer months. The frozen ones cook quite nicely and, treated correctly, no one will know.

Ingredients

  • 1 kg herring roes
  • 350 g butter
  • salt and pepper

Method

Dry the herring roes on some kitchen paper. Heat 50 g of the butter in one large or two smaller frying pans (or cook the roes in batches).

Season the roes and cook them on a medium heat until they are golden brown (about 7 minutes) - they will curl up during cooking.
