  • 2 cups (500 ml) vegetable stock
  • 2 dried shiitake mushrooms


In a large saucepan over medium heat, bring the vegetable stock, dried mushrooms and nori to the boil. Lower the heat, cover and simmer for 10–15 minutes to let the flavours infuse the stock, then strain, discarding the solids.
