Tosazu is a rice vinegar dressing with bonito flakes added for a robust flavor. This dressing is used to coat seasonal fresh fish, shellfish, sea vegetables, and fresh or cooked vegetables.

Ingredients

Method

In a small saucepan, combine all the ingredients, and bring them almost to a boil over medium heat. Turn off the heat, and let the mixture stand for 1 minute. Then strain the liquid through a colander lined with a tightly woven cotton cloth, and discard the bonito flakes. Let the dressing cool.
