Tentsuyu is a dipping sauce that is served with piping-hot fried foods, such as tempura. Dipping hot foods in tentsuyu cools them a little, and at the same time provides extra flavor. This sauce is served at room temperature.

Ingredients

  • 3 tablespoons mirin (sweet cooking wine)
  • 2 cups ichiban dashi (first fish stock)

Method

In a medium pot, bring all the ingredients to a boil. Remove the pot from the heat, and let the sauce cool to room temperature.

You can refrigerate the sauce for up to three days, covered. Before using it, heat it through and let it cool to room temperature.
