Amazu is a sweet vinegar dressing. It is good for pickling vegetables such as daikon, carrot, lotus root, turnip, Chinese cabbage, and cucumber.
In a small saucepan, combine all the ingredients, and bring them to a boil over medium heat. Turn off the heat, let the mixture cool. Store it in a covered container in the refrigerator for up to a week.
