Prepare kanpyo this way for your next sushi party. Roll the whole gourd strips in sushi rice, or mince them and toss them with the rice. Cooked kanpyo freezes well for later use.
Rub the kanpyo with the salt. Rinse off the kanpyo under cold running water. In a medium bowl of cold water, soak the gourd strips until they are softened, about 15 minutes.
Drain the gourd strips, and transfer them to a medium pot. Add enough water to barely cover them, and bring the mixture to a boil over medium heat. Cook them, covered with a drop lid, for 10 minutes.</
