Karashi sumiso, mustard-vinegar-miso dressing, is a loose pastelike dressing made from Saikyo miso (sweet white miso), sugar, komezu (rice vinegar), dashi (fish stock), and hot mustard. This dressing has a pleasant bitter, sharp taste and is exceptionally good as an accompaniment to parboiled shellfish, sashimi, sea vegetables, and parboiled vegetables.
