My mother made sure that tekkamiso was always available at our dinner table. This is a condiment in which soybeans, burdock, carrot, and scallions are cooked together and flavored with sweetened mamemiso, soybean miso. Tekkamiso was our favorite accompaniment to plain cooked white rice. Because of this delicious topping, we frequently ate so much rice that we had no room for anything else.
