Since Japanese tofu dressing has some similarity in flavor and texture to Middle Eastern hummus, I experimented with hummus made from firm tofu. The result was a disaster! The tofu, first of all, lacked the sweet taste that chickpeas contribute to hummus. Second, the texture of the tofu after a whirl in the food processor was unpleasantly smooth and rather slimy.
