Learning to make an authentic Spanish tortilla reminded me of my mother’s tofu omelette. It is made of tofu, eggs, and vegetables such as carrot, gobo (burdock), and shiitake mushrooms, and flavored with sugar, sake (rice wine), and shoyu (soy sauce). Although the resulting dish tastes completely different from the Spanish version, the form and method are very similar. This delightful dish could be the centerpiece of a light vegetarian meal.
