Golden brown tofu cubes served in hot tempura dipping sauce is a popular dish at homes, pubs, and restaurants throughout Japan.

Before the tofu is fried, it is lightly dredged in potato starch, which creates an attractive golden, crisp coating during the frying process. Cornstarch, arrowroot starch, or all-purpose flour can be used as a substitute.
