Goma-ae, vegetables in black sesame seed dressing, is a popular Japanese salad. Unlike the mild white variety, black sesame seeds have a distinctive, rich flavor. Any seasonal vegetables, such as asparagus, mustard greens, kale, mizuna, broccoli, and eggplant, go very well with this dressing.
Put the toasted sesame seeds into a suribachi or other mortar, and grind them to an oily paste. Add the sugar, blending thoroughly. Add the dashi 1 tablespoon at a time, mixing until smooth.
