Somewhat to my surprise, I recently spotted fresh young bamboo shoots at a supermarket near my home in Manhattan. In Japan, baby shoots that haven’t yet broken the surface of the soil are dug out, cleaned, and served raw in sashimi style, with wasabi and shoyu (soy sauce). Since the sweetness disappears soon after cutting, this juicy, tender treat can be enjoyed only on rare occasions. In cities, this early-spring delicacy is usually found only at first-class restaurants.
