This is a very quick pickled cabbage preparation. You may be able to find a Japanese pickling pot at a Japanese food or equipment store. The pot has an inner lid that is screwed down to apply the proper pressure to vegetables. If you can’t find a Japanese pickling pot, a large stone placed on a plate over the pickles will do the job nicely.
