Tekka-maki is a thin rolled sushi with a block of maguro, tuna, in the center. Tekka literally means “iron fire.” The roll is so named because the bright red fresh tuna in the center of the white rice reminds people of a red-hot iron bar.

Traditional tuna roll employs lean tuna fish and a little wasabi in the center. Other popular thin rolls have different ingredients in the center. A roll with cucumber is called kappa-maki, one with bright yellow pickled
