An inside-out roll is also called a California roll. As the name implies, this type of sushi was invented in California by a young, curious chef, who at a customer’s request rolled the nori inside instead of outside the rice. This preparation has become very popular all around the world, including in Japan. However, the majority of sushi chefs at authentic sushi restaurants in Japan still refuse to accept this new invention as true sushi.
