My husband affectionately named this colorful new sushi “garden oshizushi.” What better name could be given to this attractive creation? Sushi rice is pressed together with red and yellow bell pepper, zucchini, and mild feta cheese. The result is a new flavor experience. Enjoy it with a glass of chilled Chardonnay or retsina.

This preparation uses two 3.2-by-6-inch wooden molds. You can substitute four similarly sized plastic containers without lids.
