A chakin is a special square cloth used during a formal Japanese tea ceremony. This sushi acquired its name because the rice is elegantly wrapped in a square thin omelette, which reminds people of a chakin cloth. The top third of the omelette is squeezed to make a neck, then tied with blanched mitsuba greens. The very top part is left loosely open. This sushi looks like a golden gift pouch.
