Tiny, sweet green peas turn plain cooked rice into a delicious treat. For this recipe, fresh peas are a must. Frozen peas lack sweetness and texture.
Put the rice into a bowl, cover it with cold water, and rub it in the water for 10 to 20 seconds. Discard the liquid. Add fresh water, and repeat the process three times. Cover the rice with fresh cold water, and soak it for 30 minutes.
