In this colorful dish, the striking combination of black hijiki, orange carrot, brown shiitake mushrooms, light brown burdock, green peas, and white chicken pieces is appealing to the eyes as well as to the stomach. Brown rice, instead of the usual white rice, enhances the richness of the dish.

When burdock is not available, increase the amount of carrot in the recipe.
