One day I found a bowl of cooked brown rice left from the previous day. I decided to make a quick stir-fried rice with my favorite ingredients in the pantry and refrigerator: hijiki sea vegetable, anchovy paste, and parmesan cheese. The resulting dish was so good that I now purposely refrigerate cooked rice to make this hijiki rice for the next day’s quick lunch or dinner.
