This is another cherished fusion dish that was created at the turn of the twentieth century and has established a permanent position in the Japanese kitchen. Chikin raisu, which uses French and Chinese techniques, is enhanced with another French touch: The stir-fried rice is wrapped in an omelette. In this way the rice remains piping hot, and the diners can enjoy more flavor, texture, and color with each bite.
