Soba Sushi

Can we make sushi with soba noodles? The answer is yes, and it is a popular preparation in Japan. Cooked noodles with a filling are rolled in nori, in the same fashion as sushi rice, and then cut into bite-sized disks. These are served not with shoyu (soy sauce) but with a noodle-dipping sauce.
