Almost any topping you can think of is good with hot ramen noodles. In this dish, noodles in hot broth are served with a sauce of miso and chopped pork. Instead of using ground pork from the butcher, I buy a piece of pork shoulder and chop it with a knife into small pieces. In this way I get a nice, crumbled texture in the sauce.

The dark brown color of this sauce may not look very appetizing, but the wonderful flavor will sweep your doubts aside. Brighten up the presentation
