In this preparation, ramen noodles in hot broth are topped with a quickly stir-fried vegetable mixture. The vegetables used here can be replaced with seasonal varieties of your choice. When selecting vegetables, be aware of how the colors and textures will mix. This is my favorite combination.

Kikurage, described, is available at Japanese and other Asian food stores.
