Sashimi is always presented with three partners: ken, tsuma, and karami. Ken is the primary garnish, on which the fish slices rest when they are served. Popular materials for ken include julienne strips of daikon, carrot, and cucumber. The primary garnish does two things. First, it absorbs any fishy flavor from the fish slices, so the fish stays fresh longer. Second, a little of the primary garnish eaten after a slice of fish refreshes the palate.
