Buri, yellowtail, is a full-flavored, oily fish that tastes best during the cold months. In Japan, the fish undergoes several name changes according to its size and age. Buri is three-year-old, fully grown yellowtail, weighing around 13 pounds. Smaller one- or two-year-old fish are called hamachi, a name you may have heard at a sushi restaurant.
