Shinshu is a region between Tokyo and Kyoto, in the middle of the main island of Japan. The area is mountainous, with many small rivers and gorges. The air and water in this region are much cleaner than in many other parts of the country. In summer Shinshu is full of lush greenery, which attracts many hikers. In winter the area is heavily blanketed with snow, and crowded with skiers.
Shinshu is also known for its production of high-quality buckwheat and wasabi. Soba (buckwheat) nood
