This popular take-out dish is sold at butcher shops across Japan. The boned, skinned chicken breasts are fried in a coating of panko breadcrumbs, which provide a pleasant crispness and at the same time trap moisture, making the meat tender and juicy.

The cutlets are eaten with a sauce called tonkatsu. You can buy prepared tonkatsu sauce at a Japanese or Asian food store, but it is simple to make from scratch, and your homemade tonkatsu sauce will be free
