In this preparation chicken breast is rubbed with mamemiso (soybean miso), rolled with crisp bacon and shiso, and then cooked to a golden hue. The cut surface of the rolls have an elegant appearance.
The chicken is traditionally served with grated daikon with drops of shoyu (soy sauce). Sliced, the chicken is also an ideal topping for fresh salad greens or grilled vegetables. Toss the salad greens with miso dressing.
