This is a very simple and quick dish that my mother used to make when she had very little time to spend in the kitchen. The preparation is adopted from the Chinese kitchen. The chicken is tossed with shiitake mushrooms, long onions, and seasonings, and steamed. The steaming process transforms these simple ingredients into a comforting, delicious chicken dish. You might add asparagus, broccoli, or carrot for additional color and flavor.
