When you have no time to cook dried beans, use unsweetened azuki bean flour. This product, called sarashi-an or koshi-an, is available at Japanese stores. With it you can make sweet azuki paste in 20 minutes or so.

Ingredients

  • 1 package (6.5 ounces) sarashi-an or koshi-an (azuki flour)

Method

In a medium pot, combine the azuki flour with 2 cups and 6 tablespoons water. Stir with a wooden spatula until the mixture is smooth. Add the sugar, and mix. Place the pot over medium heat, and bring the mixture to a boil. Reduce the heat to low, and cook, stirring with a wooden spatula, until the texture becomes like that of soft peanut butter, 20 minutes.
