I created this dessert while playing with agar-agar to see how far I could extend its usefulness. Among all forms of kanten, ito kanten (the string form) produces the most pleasant, lightest mousse. Unlike ordinary mousse, this kanten mousse can sit at room temperature for one hour or more without melting, a characteristic very useful for the chef or party host.
