Place10g (¼oz) white sesame seeds in a small frying pan over low heat. Toast them gently. Shake the pan from time to time to prevent burning. As soon as you hear the sesame seeds popping, take the pan off the heat and leave them to cool down.
Transfer the seeds to a suribachi or mortar and coarsely grind them.
Break200g (7oz) firm tofu into pieces and put it in a blender or food processor with 1tablespoonsoy sauce, 1teaspoonlight brown sugar, 4teaspoonsmirin and 2teaspoonswhite miso. Blend until smooth.
Mix in the ground sesame seeds. This tastes great with crudités or grilled vegetables.
