Method

Place 10 g (¼ oz) white sesame seeds in a small frying pan over low heat. Toast them gently. Shake the pan from time to time to prevent burning. As soon as you hear the sesame seeds popping, take the pan off the heat and leave them to cool down.

Transfer the seeds to a suribachi or mortar and coarsely grind them.

Break 200 g (7 oz) firm tofu into pieces and put it in a blender or food processor with 1 tablespoon soy sauce, 1 teaspoon light brown sugar, 4 teaspoons mirin and 2 teaspoons white miso. Blend until smooth.

Mix in the ground sesame seeds. This tastes great with crudités or grilled vegetables.
