This is an interesting combination of tomato, tofu, nuts and aromatic herbs. If you don’t have the onion dressing, simply serve the tofu with soy sauce and extra virgin olive oil or Crispy Garlic and Chilli Oil.



  • 600 g (1 lb 5 oz) silken tofu, drained and cut into 1 cm (½ inch) slices
  • 10 cherry tomatoes, halved
  • 15 g (½ oz) shiso (perilla) leaves, thinly sliced, or coriander (cilantro) leaves
  • 3 cm ( inch) piece of fresh ginger, peeled, cut into thin matchsticks and kept in cold water
  • 3 tablespoons Japanese Onion Dressing


  • 20 g (¾ oz) almonds


Preheat the oven to 170°C (325°F) and toast the almonds until they release their nutty smell. Remove from the oven and leave to cool. When the almonds are cool enough to handle, roughly chop them.

Put the tofu on a serving platter and scatter the almonds, tomatoes, herbs and drained ginger over the top. Pour the dressing over the salad to serve.
