01 Hot Spring Poached Eggs

Method

Bring 4 cups (1 litre) water to the boil and take it off the heat. Add 200 ml (7 fl oz) room temperature water to the pan. Add 2 eggs to the water and leave to stand for 14 minutes.

Remove the eggs from the water and leave to stand for 3 minutes.

Crack the eggs and serve.
