You can buy ready-made mentsuyu, but a homemade one is much cheaper and healthier, and so easy to make. It also keeps well – make a big batch so this dish can be prepared in minutes.



  • ¾ cup (185 ml) Mentsuyu
  • 15 g (½ oz) fresh ginger, peeled and finely grated
  • 4 spring onions (scallions), finely chopped


  • 400 g (14 oz) soba noodles
  • 2 teaspoons wasabi
  • 2 tablespoons white sesame seeds, toasted and coarsely ground


Cook the soba noodles according to the packet instructions, then drain and rinse under cold running water until cool.

Mix the mentsuyu with ½ cup (125 ml) cold water. Divide the noodles among four plates. Pour the mentsuyu into four small bowls for dipping.

Put the ginger, wasabi, spring onion and ground sesame seeds on smaller plates to be added according to taste to the diluted mentsuyu to make individual dipping sauces.

Dip a small amount of noodles into the sauce as you eat them.
