Mix 150 g ( oz) red miso, 150 ml (5 fl oz) runny honey and 1 tablespoon sake in a small bowl.

Coat 4 boneless fillets of salmon, duck or chicken with the miso marinade in a resealable plastic bag. Leave in the fridge overnight or for up to 3 days. As the days go by, the flavour gets stronger.

Preheat the grill to medium–high.

Remove the fillets from the marinade and wipe off the miso marinade using paper towel.

Cook under the grill for 5–8 minutes on each side until cooked through.
