This nut-based sauce is a good way to add body and flavour to vegetables.

Ingredients

  • 250 g/9 oz/1⅔ cups green beans

Method

  1. Trim the beans and then cut them diagonally into 1 cm/½ in long nib-shaped pieces. Cook for 2 minutes in boiling water with a generous pinch of salt. Drain.
  2. To make the walnut sauce, pound all but 2-4 walnut pieces to a fine paste in a mortar with a pestle.
