Age or Abura-age, fried thin tofu, can be used as a bag like a Middle Eastern pitta bread. Here, a generous amount of chopped spring onion and other aromatic ingredients till the bag. In Japan, spring onions are thought to prevent colds in the winter, and this dish is made doubly effective by also including grated garlic.

Ingredients

  • 1 packet abura-age (2 abura-age per packet)

Method

  1. Put the abura-age in a sieve and pour hot water from a kettle over to wash off excess oil. Drain and gently dry on kitchen paper.
  2. Put one abura-age on a chopping board and roll over several times with a rolling pin. Cut in half and carefully open at the cut part to make two bags. Repeat with the remaining piece.
