Simmered Tofu with Vegetables

A typical Japanese dinner at home consists of a soup, three different dishes and a bowl of rice. One of the three dishes is always a simmered one like this.

Ingredients

  • 4 dried shiitake mushrooms
  • 450 g/1 lb daikon

Method

  1. Soak the dried shiitake in 250ml/8fl oz/1 cup water for 2 hours. Drain and discard the liquid. Remove and discard the stalks.
  2. Peel the daikon and slice into 1cm/½in discs. Shave the edge of the daikon discs to ensure they are evenly cooked. Plunge into cold water.
