Yuan, a sauce made from sake, shoyu, mirin and citrus fruit, is often used to marinate ingredients either before or after cooking. In this recipe, the sauce gives a delicate flavour to pork. If possible, leave the meat to marinate overnight.

  1. Preheat the oven to 200°C/400°F/Gas 6. Rub the pork with crushed garlic and salt, and leave for 15 minutes.
