Dry Brine or Duck Salt Marinade

Ingredients

  • 1 pound kosher or sea salt
  • ½ cup sugar
  • 6 sprigs fresh thyme
  • 6 bay leaves, torn apart
  • 2 tablespoons juniper berries, crushed
  • 2 tablespoons freshly ground coarse black pepper

Method

Mix the ingredients together and store in a covered jar.

Dry Brining Times—Refrigerated
♦ Duck breast (whole) on the bone 6 hours
♦ Rib roast 2 days
♦ Whole fish (2–3 pounds) 2 hours
♦ Whole salmon 5 hours
♦ Lamb rack 6 hours
