Asian Oil and Vinegar Sauce

Ingredients

  • 2 tablespoons Chinese black beans, rinsed, soaked 3 times in water for 10 minutes each time, drained
  • 2 tablespoons fresh Italian parsley leaves, chopped
  • ¼ cup fresh cilantro leaves, chopped
  • 2 tablespoons fresh chives, chopped
  • 2 salted anchovy filllets, chopped
  • ¼ cup rice wine vinegar
  • ½ cup peanut or almond oil
  • 2 tablespoons sesame oil
  • pinch salt
  • pinch freshly ground black pepper

Method

Put all the ingredients except the oils in a bowl and mix. Stir in the oil and check for seasoning.
