  • 1 cup mixed herbs (see green herb mayonnaise)
  • ¼ cup finely chopped fresh chives
  • 1 clove garlic, peeled, very finely minced
  • 4 salted anchovy fillets, minced
  • ¼ cup freshly squeezed lemon juice
  • ½ cup extra virgin olive oil
  • Freshly ground black pepper


Process the herbs as in the recipe for green herb mayonnaise, put them in a bowl with all the other ingredients, and mix. Season with pepper and salt if necessary.


To make green goddess butter, use the same recipe as for the mayonnaise, but omit the mayonnaise and the sour cream, substituting a pound of unsalted butter instead, mixing everything in a food processor, and seasoning it with salt and pepper.
