The cornmeal used for mamaliga, like that for polenta, may have small or large grains, so the cooking time will need to be adjusted accordingly. To make mamaliga for a dairy meal, stir in a few tablespoons of butter and about 450 g/1 lb/2 cups cottage cheese or Brinza and serve hot.
