When many of Bulgaria’s Jews went to Israel, they took with them their passion and skills for excellent salad-style yogurts, of which this is one. If possible, add another Bulgarian flourish by using one of their thick sheep’s milk yogurts.

Ingredients

  • 1 large cucumber
  • 3–5 garlic cloves, finely chopped
  • 250 ml/8

Method

  1. Dice the cucumber finely and place in a large mixing bowl.

  2. Add the garlic, sour cream or yogurt and cream, thick yogurt, dill and salt. Mix together, then cover and chill.
