Israel grows avocados and oranges and exports them all over the world. Imagine the amazement the settlers from Eastern Europe must have felt as these sun-drenched fruit grew so abundantly from their trees and groves! This is a refreshing salad of contrasting tastes and textures, full of freshness and Mediterranean flavour.

Ingredients

  • 2 oranges
  • 2 well-flavoured tomatoes
  • 2 small avocados
  • 60

Method

  1. Plunge the tomatoes into boiling water for 30 seconds, then refresh in cold water. Peel away the skins, cut into quarters, remove the seeds and chop roughly.
  2. Cut the avocados in half, remove the stones (pits) and carefully peel away the skin. Cut into chunks.
