Little pies are part of the Moorish tradition in Spain and of the peaceful interchange of flavours between Christians, Jews and Muslims. The sweetness of raisins with the crunch of nuts and leafy freshness of spinach is a classic culinary souvenir throughout the region.

Method

  1. To make the filling, soak the raisins in a little warm water for 10 minutes. Drain well, then chop roughly.
